Crescent Taco Pie

This was the yummiest dish ever!!!!  I must make this again. My Crescent Taco Pie.

Lets get the ingredients together:



 Ingredients:
2 Pillsbury Crescent Rolls
2 lbs Ground beef or Ground turkey
shredded cheese of your choice
1 can of refried beans
1 jar of chunky salsa
1 pkg of taco seasoning


So lets get started:
1. Brown your ground meat along with the taco seasoning pkg.
2. Add the salsa to the ground meat.
3. Open one pkg of crescent rolls and roll out into your pan.
4. Once the meat mixture is cooked, add to the pan with the crescent rolls.











5. Add your shredded cheese on top.











6. Roll out the other crescent roll on top.











7.Bake at 350 or until crescent roll is brown.

Dont mind the chicken wings. Thats another recipe.  I think its on here, if not I will post later.

Enjoy and let me know how it goes. I think it would be great to do ahead and freeze without baking for a meal later on.

Gumbo

Made gumbo today.

Ridiculously delish!
Ingredients
3 large boneless skinless chicken breast halves
Salt and pepper
1/4 cup vegetable oil
1 pound smoked sausage, cut into 1/4-inch slices
1/2 cup all-purpose flour
5 tablespoons margarine
1 large onion, chopped
8 cloves garlic minced
1 green bell pepper, seeded and chopped
3 stalks celery chopped
1/4 cup Worcestershire sauce
1/4 bunch flat leaf parsley, stems and leaves, coarsely chopped, plus chopped leaves for garnish
4 cups hot water
5 beef bouillon cubes
1 (14-ounce can) stewed tomatoes with juice
2 cups frozen sliced okra
4 green onions, sliced, white and green parts
1/2 pound small shrimp, peeled, deveined and cooked
Directions
Season the chicken with salt and pepper. Heat the oil in a heavy bottomed Dutch oven over medium-high heat. Cook the chicken until browned on both sides and remove. Add the sausage and cook until browned, then remove. Sprinkle the flour over the oil, add 2 tablespoons of margarine and cook over medium heat, stirring constantly, until brown, about 10 minutes. Let the roux cool.

Return the Dutch oven to low heat and melt the remaining 3 tablespoons margarine. Add the onion, garlic, green pepper and celery and cook for 10 minutes. Add Worcestershire sauce, salt and pepper, to taste and the 1/4 bunch parsley. Cook, while stirring frequently, for 10 minutes. Add 4 cups hot water and bouillon cubes, whisking constantly. Add the chicken and sausage. Bring to a boil, then reduce the heat, cover, and simmer for 45 minutes. Add tomatoes and okra. Cover and simmer for 1 hour. Just before serving add the green onions, shrimp and chopped parsley.

I didn't add okra. Yuck.

Great corn bread

Want great Corn bread? What? Yummmm..

I'm going to share my recipe.

You see the ingredients in the picture?

I made a big batch. This would be times three. So i will give it you for one batch.

1 box jiffy Corn bread
1egg
1/3 c milk
1/3 stick butter, melted
1/3 c flour
1 can of corn
1/3c evaporated milk

Mix all ingredients together and put in pan and bake at 400° for 25-30 mins.

Enjoy!

Sundays perfect meatloaf

Lovely meatloaf in my Rachael Ray Bubble & Brown.

Recipe:
2 lbs ground meat
1 onion chopped
Paprika
Pepper
Crushed red pepper flakes
Onion garlic powder
Thyme
Parsley
1 egg

BBQ sauce
Can of Campbell's Brown gravy with onions

Mix All ingredients except last 2.

Top meatloaf with BBQ sauce.

Put in 350°oven for 45 mins and cover with foil.

After 46 mins take cover off and pour gravy overt and put back in oven for 15 mins more.

Voila! Perfect Sunday Meatloaf.

I love maxi dresses, skirts....They are very forgiving no matter your size and hide many a flaw. And very modest. Its hard to find nice skirts and dresses that dont show off your hoo ha.

I used Polyester shantung for mine and a taffeta for the short one. I also did it in a knit jersey.


Sugar free cheesecake stuffed strawberries

My hubs requested this after seeing a post on FaceBook.

So I made them sugar free.
1 lb of strawberries
1-8 oz of cream cheese
splash of lemon juice
1/4 c sour cream
1/2 c IDEAL brown sugar (or to taste)
1/2 T Madagascar vanilla bean paste

Cut the tops of berries off to create a flat surface.
Cut an X 1/2 way thru tip of berries.

Mix all ingredients in mixer and put in zip lock bag. If you dont have a cupcake filler tip, then cut a small hole in corner of bag and pipe cream in the berries.

Sugar free low carb caramel apple cheesecake.

I KNOW this was great. My kids devoured it. Left me with scraps.


low carb sugar free red velvet brownies

Sometimes it is hard to make all these sweets when I am following a low carb diet. OH. SO. HARD!!!!

But never fear!!!!! Super ButterCreamDivas to the rescue!!!

Low Carb Sugar Free Red Velvet Brownies!! What? You lie?

The Devil is a lie!!!! I have done it!! And here they are!

I usually dont share my dessert recipes..but I will for my low carbers or diabetics:

    1 cup unsalted butter, at room temperature;
1-1/2 cups xylitol
 1-1/2 cups IDEAL brown sugar substitute
 4 large eggs, at room temp
 1ounce red food coloring
4 teaspoons Madagascar bourbon vanilla paste
2-1/2 cups all-purpose Carbquik (low carb baking mix)
 6 tablespoons unsweetened cocoa powder
1/2 teaspoon salt

In a separate mixing bowl, add the flour, cocoa powder and salt, and sift.
In a mixer, cream butter and sugar
Then add one egg at a time, beating in between and scraping down the sides of the bowl as needed.
Then add in the vanilla.
Then add red food coloring.
 Slowly  add the flour mixture to the batter,  being very careful not to over mix.
 Scrape the sides down insuring all the flour is mixed in.  Don’t overmix!  The batter will be very thick.
 Spread the thick batter out onto a greased 9 x 13 baking pan.

Bake at 350° for 25-30 minutes, or until just set.  The brownies will have a thin crust and gooey underneath if baked for about 25 minutes.
More if you like them very done and less if you like them a little gooey.

Made these carrot cake cuppies with mini carrot cake cookie on top and candied pecans.



Strawberry Shortcake Baby Shower Cake

I did this cake back in December 2012.

This was a strawberry shortcake with a strawberry balsamic filling.  Handmade fondant decorations and roses.





Milk and Cow baby shower cake

I cant believe I didnt post a pic of this milk and cow themed baby shower cake.

I did this back in July 2012. It was THE HOTTEST day of the year. Over 100 degrees and I had to do a buttercream and fondant cake. OY!!!

We had air conditioners everywhere!!!  The car, living room, fans in the kitchen....

It was a butter yellow cake with Boston Cream Filling and one with Caramel Cream Cheesed Filling.

Hello my lovelies!!

I am a terrible blogger. I have not been paying you any attention. MY APOLOGIES!!!!

I have been baking, cooking and now sewing!!! Whew! Im exhausted.

Here is a Red Velvet Cake with candied pecans I did a few weeks ago and red velvet cuppies and triple chocolate cuppies with swirled chocolate kisses on top.
