Caramelized onions grilled cheese with bacon


So, do I really need to say anything? Dont these pictures make you drool?! 

Go ahead, wipe the screen off and get ready to write me thank you emails for the rest of your life.....I'm serious...its THAT good. Dare i say- GREAT?

Ingredients:
1 large onion
1t olive oil
2T butter
1t sugar
2T dark rum (optional)
4 slices bread
2T butter
6 slices provolone cheese
4 slices of bacon

Go ahead and cook bacon in microwave while you start to caramelize the onions.

Heat olive oil and butter in pan and when hot, put onions and sugar in. Cook until softened and add rum. This IS optional, but adds a nice flavor. 
Continue cooking onions for 20 mins or so until browned and caramelized. If they start to stick to pan add a little water until evaporated.

Once onions are cooked,  remove from pan and set aside.  By now, your bacon should be cooked and set aside also.

Place half of remaining butter in pan and toast one side of bread.  Flip bread over and place remainin butter in pan. Layer bacon and cheese and onions on bread with cheese being right on outter layers. Then press together and keep flipping until cheese is melted.
